Description

A low-carb take on the classic Cordon Bleu, using zucchini slices instead of pasta. Ham and Swiss cheese are rolled inside zucchini and baked until tender and golden.


Ingredients

  • 2 medium zucchinis
  • 4 slices ham
  • 4 slices Swiss cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis into 1/4-inch thick rounds.
  3. Lay out a zucchini slice. Top with a slice of ham and a slice of Swiss cheese.
  4. Roll up the zucchini slice, enclosing the ham and cheese.
  5. Place the rolled zucchini seam-side down in a baking dish.
  6. Repeat with the remaining zucchini, ham, and cheese.
  7. Drizzle olive oil over the zucchini rolls.
  8. Season with salt and pepper.
  9. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

Notes

  • For a crispier topping, you can sprinkle breadcrumbs over the zucchini before baking.
