Description
A low-carb take on the classic Cordon Bleu, using zucchini slices instead of pasta. Ham and Swiss cheese are rolled inside zucchini and baked until tender and golden.
Ingredients

- 2 medium zucchinis
- 4 slices ham
- 4 slices Swiss cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchinis into 1/4-inch thick rounds.
- Lay out a zucchini slice. Top with a slice of ham and a slice of Swiss cheese.
- Roll up the zucchini slice, enclosing the ham and cheese.
- Place the rolled zucchini seam-side down in a baking dish.
- Repeat with the remaining zucchini, ham, and cheese.
- Drizzle olive oil over the zucchini rolls.
- Season with salt and pepper.
- Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
Notes
- For a crispier topping, you can sprinkle breadcrumbs over the zucchini before baking.
- Add a pinch of garlic powder for extra flavor.
- Serve with your favorite dipping sauce.
