Description

A quick and delicious one-pan meal featuring flaky salmon, tender orzo, and bright lemon flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound salmon fillet, skin removed, cut into 1-inch pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add salmon pieces and cook for 2-3 minutes per side, until lightly browned. Remove salmon from skillet and set aside.
  3. Add orzo to the skillet and toast for 1 minute, stirring constantly.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and liquid is absorbed.
  5. Stir in parsley, lemon juice, and lemon zest.
  6. Return salmon to the skillet and gently stir to combine.
  7. Season with salt and pepper to taste.
  8. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the orzo.
  • Garnish with extra fresh parsley and lemon wedges before serving.
