A quick and delicious one-pan meal featuring flaky salmon, tender orzo, and bright lemon flavors.
Ingredients

- 1 tablespoon olive oil
- 1 pound salmon fillet, skin removed, cut into 1-inch pieces
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup chopped fresh parsley
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add salmon pieces and cook for 2-3 minutes per side, until lightly browned. Remove salmon from skillet and set aside.
- Add orzo to the skillet and toast for 1 minute, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and liquid is absorbed.
- Stir in parsley, lemon juice, and lemon zest.
- Return salmon to the skillet and gently stir to combine.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes with the orzo.
- Garnish with extra fresh parsley and lemon wedges before serving.
