Ingredients

  • 1 lb salmon fillet
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the salmon fillet with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the orzo pasta to the skillet and toast for 1 minute, stirring constantly.
  5. Pour in the chicken broth and bring to a simmer. Cook for 5-7 minutes, or until the orzo is al dente.
  6. Stir in the heavy cream and Parmesan cheese.
  7. Place the seasoned salmon fillet on top of the orzo mixture.
  8. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Remove from the oven, drizzle with lemon juice, and sprinkle with fresh parsley.
  10. Season with additional salt and pepper if needed.
