- 1 lb salmon fillet
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the salmon fillet with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
- Add the orzo pasta to the skillet and toast for 1 minute, stirring constantly.
- Pour in the chicken broth and bring to a simmer. Cook for 5-7 minutes, or until the orzo is al dente.
- Stir in the heavy cream and Parmesan cheese.
- Place the seasoned salmon fillet on top of the orzo mixture.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven, drizzle with lemon juice, and sprinkle with fresh parsley.
- Season with additional salt and pepper if needed.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- You can substitute vegetable broth for chicken broth.
