Description

A simple and delicious walking taco casserole.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 bag (9 ounces) corn chips

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Brown the ground beef in a skillet over medium heat. Drain any excess grease.
  3. Stir in the taco seasoning, kidney beans, and diced tomatoes with green chilies. Cook for 5 minutes, stirring occasionally.
  4. Remove the skillet from the heat. Stir in most of the shredded cheese.
  5. Pour the beef mixture into a 9×13 inch baking dish.
  6. Crush the corn chips and sprinkle them evenly over the top of the beef mixture.
  7. Sprinkle the remaining shredded cheese over the chips.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.

  • Optional toppings include sour cream, salsa, avocado, or jalapeños.
