A simple and delicious walking taco casserole.
Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 bag (9 ounces) corn chips
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a skillet over medium heat. Drain any excess grease.
- Stir in the taco seasoning, kidney beans, and diced tomatoes with green chilies. Cook for 5 minutes, stirring occasionally.
- Remove the skillet from the heat. Stir in most of the shredded cheese.
- Pour the beef mixture into a 9×13 inch baking dish.
- Crush the corn chips and sprinkle them evenly over the top of the beef mixture.
- Sprinkle the remaining shredded cheese over the chips.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Notes
- Serve immediately.
- Optional toppings include sour cream, salsa, avocado, or jalapeños.
