Description

A simple and delicious sweet zucchini relish perfect for summer.


Ingredients

Scale
  • 4 cups grated zucchini
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 cup granulated sugar
  • 1 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon black pepper

Instructions

  1. Combine grated zucchini, onion, green bell pepper, and red bell pepper in a large pot.
  2. Add sugar, vinegar, salt, celery seed, and black pepper.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  4. Reduce heat and simmer for 20-30 minutes, or until thickened.
  5. Stir frequently to prevent sticking.
  6. Ladle hot relish into sterilized jars, leaving 1/2 inch headspace.
  7. Wipe rims and place lids on jars.
  8. Process in a boiling water bath for 10 minutes.
  9. Remove jars and let cool completely.
