A simple and delicious sweet zucchini relish perfect for summer.
Ingredients

- 4 cups grated zucchini
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 cup granulated sugar
- 1 cup white vinegar
- 1 teaspoon salt
- 1/2 teaspoon celery seed
- 1/4 teaspoon black pepper
Instructions
- Combine grated zucchini, onion, green bell pepper, and red bell pepper in a large pot.
- Add sugar, vinegar, salt, celery seed, and black pepper.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce heat and simmer for 20-30 minutes, or until thickened.
- Stir frequently to prevent sticking.
- Ladle hot relish into sterilized jars, leaving 1/2 inch headspace.
- Wipe rims and place lids on jars.
- Process in a boiling water bath for 10 minutes.
- Remove jars and let cool completely.
