Description

A classic potato salad recipe that is both delicious and easy to make.


Ingredients

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 1 cup mayonnaise
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 hard-boiled eggs, chopped
  • 2 celery stalks, chopped

Instructions

  1. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a large bowl, combine mayonnaise, red onion, dill, Dijon mustard, salt, and pepper. Stir well.
  3. Add the cooled potatoes, chopped eggs, and celery to the bowl. Gently toss to combine.
  4. Cover and refrigerate for at least 1 hour before serving.
