- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 1 cup mayonnaise
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 hard-boiled eggs, chopped
- 2 celery stalks, chopped
Instructions
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a large bowl, combine mayonnaise, red onion, dill, Dijon mustard, salt, and pepper. Stir well.
- Add the cooled potatoes, chopped eggs, and celery to the bowl. Gently toss to combine.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- For a creamier salad, use full-fat mayonnaise.
- Add a pinch of paprika for color and flavor.
- You can add other ingredients like pickles or bacon bits.
