Ingredients

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 1 cup mayonnaise
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 hard-boiled eggs, chopped

Instructions

  1. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
  2. In a large bowl, combine mayonnaise, celery, red onion, dill, Dijon mustard, salt, and pepper. Stir until well combined.
