- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 1 cup mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 hard-boiled eggs, chopped
Instructions
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
- In a large bowl, combine mayonnaise, celery, red onion, dill, Dijon mustard, salt, and pepper. Stir until well combined.
- Add the drained potatoes and chopped eggs to the bowl. Gently toss to coat.
- Chill for at least 30 minutes before serving.
Notes
- For a creamier salad, use full-fat mayonnaise.
- You can add other ingredients like pickles, chives, or bacon bits.
