A rich and decadent chocolate cake layered with three types of chocolate mousse.

- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 0.5 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup buttermilk
- 0.5 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 8 ounces bittersweet chocolate, chopped
- 8 ounces semi-sweet chocolate, chopped
- 8 ounces milk chocolate, chopped
- 2 cups heavy cream, divided
- 0.25 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Carefully stir in the boiling water. The batter will be thin.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the chocolate mousses. Place the bittersweet chocolate in a heatproof bowl. Heat 0.5 cup of heavy cream until simmering, then pour it over the chocolate. Let it sit for 5 minutes, then stir until smooth. Let it cool slightly.
- Repeat the process for the semi-sweet chocolate and milk chocolate, using another 0.5 cup of heavy cream for each.
- In a separate bowl, whip the remaining 1 cup of heavy cream with the powdered sugar until stiff peaks form.
- Gently fold one-third of the whipped cream into each of the cooled chocolate mixtures.
- Once the cake is completely cool, place it on a serving plate. Spread the bittersweet chocolate mousse evenly over the top. Chill for 15 minutes.
- Spread the semi-sweet chocolate mousse over the bittersweet layer. Chill for 15 minutes.
- Spread the milk chocolate mousse over the semi-sweet layer. Chill for at least 1 hour, or until firm.
Notes
- For a smoother mousse, ensure your chocolate is finely chopped.
- You can decorate the cake with chocolate shavings or fresh berries.
