Description

Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup erythritol or your preferred low-carb sweetener
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Squeeze excess moisture from the grated zucchini using a clean kitchen towel or paper towels.
  3. In a large bowl, whisk together the grated zucchini, applesauce, melted coconut oil, eggs, and vanilla extract.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, salt, cinnamon, nutmeg, and sweetener.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
