A simple casserole combining seasoned ground meat, cheese, and crispy hashbrowns with taco flavors.

- 1 pound ground beef
- 1 packet taco seasoning mix
- 1 can (10.75 ounces) cream of mushroom soup
- 1/2 cup milk
- 2 cups shredded cheddar cheese, divided
- 1 bag (30 ounces) frozen shredded hashbrowns, thawed
- 1/2 cup sour cream
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
- Stir the taco seasoning mix into the cooked beef according to package directions.
- In a large bowl, combine the seasoned beef, cream of mushroom soup, milk, and 1 cup of the shredded cheddar cheese. Mix well.
- Fold in the thawed hashbrowns until they are evenly coated.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 30 minutes.
- Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese over the top.
- Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving. Top each serving with sour cream.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup if desired.
- Use your favorite type of shredded cheese instead of cheddar.
