  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs, separated
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 1.5-quart baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, sugar, melted butter, egg yolks, vanilla extract, cinnamon, and salt. Mix until just combined.
  3. In a separate clean bowl, beat the egg whites until stiff peaks form.
