  • 1 large egg, beaten
  • 1/4 cup water
  • Vegetable oil, for frying
  • 1 cup pineapple chunks
  • 1/2 cup green bell pepper, chopped
  • 1/4 cup onion, chopped
  • For the Sauce:
  • 1/2 cup ketchup
  • 1/4 cup white vinegar
  • 1/4 cup granulated sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. In a bowl, combine flour, cornstarch, salt, and pepper.
  2. In another bowl, whisk together the egg and 1/4 cup water.
  3. Dip chicken pieces in the egg mixture, then dredge in the flour mixture, ensuring each piece is well coated.
  4. Heat about 2 inches of vegetable oil in a wok or deep skillet to 350°F (175°C).
  5. Fry chicken in batches until golden brown and cooked through, about 5-7 minutes. Remove from oil and drain on paper towels.
  6. In a saucepan, combine ketchup, vinegar, sugar, and soy sauce. Bring to a simmer over medium heat.
  7. In a small bowl, whisk together 1 tablespoon cornstarch and 1/4 cup water. Add this mixture to the simmering sauce and stir until thickened.
  8. Add pineapple chunks, bell pepper, and onion to the sauce. Cook for 2-3 minutes until vegetables are tender-crisp.
  9. Return the fried chicken to the pan and toss to coat evenly with the sauce.
  10. Serve immediately.

Notes

  • For extra crispy chicken, double-fry it. Fry once until lightly golden, remove, and let it rest for a few minutes. Then, fry again until deeply golden and crispy.
  • Adjust the sugar and vinegar to your preference for sweetness and tanginess.
  • You can add other vegetables like carrots or celery if desired.
