Ingredients

- 1 head romaine lettuce, chopped
- 1 cup shredded carrots
- 1 cup chopped celery
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup chopped red onion
- 1/4 cup sunflower seeds
- 1/4 cup croutons
- For the dressing: 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine romaine lettuce, carrots, celery, bell pepper, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad ingredients and toss to coat.
- Add sunflower seeds and croutons just before serving.
Notes
- For extra crunch, add chopped jicama or water chestnuts.
- You can substitute any nuts or seeds for sunflower seeds.
- Add grilled chicken or shrimp for a more substantial meal.
