Description

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup shredded carrots
  • 1 cup chopped celery
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped red onion
  • 1/4 cup sunflower seeds
  • 1/4 cup croutons
  • For the dressing: 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine romaine lettuce, carrots, celery, bell pepper, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss to coat.
  4. Add sunflower seeds and croutons just before serving.

Notes

  • For extra crunch, add chopped jicama or water chestnuts.
