Description

Savory French toast stuffed with sun-dried tomatoes and feta cheese.


Ingredients

  • 4 slices thick bread
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes in oil, drained and chopped
  • 1 tablespoon olive oil for cooking

Instructions

  1. In a shallow dish, whisk together the eggs, milk, oregano, and pepper.
  2. Gently separate two slices of bread. Spread half of the feta and half of the sun-dried tomatoes on one slice. Top with the second slice to form a sandwich. Repeat with the remaining bread, feta, and tomatoes.
  3. Dip each stuffed sandwich into the egg mixture, coating both sides evenly. Do not soak the bread too long.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and the cheese is slightly melted.
  6. Slice each sandwich in half before serving.

Notes

  • You can use fresh basil instead of oregano for a different flavor.
  • Serve immediately with a side of fresh greens.
