Savory French toast stuffed with sun-dried tomatoes and feta cheese.

- 4 slices thick bread
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 1/4 cup sun-dried tomatoes in oil, drained and chopped
- 1 tablespoon olive oil for cooking
Instructions
- In a shallow dish, whisk together the eggs, milk, oregano, and pepper.
- Gently separate two slices of bread. Spread half of the feta and half of the sun-dried tomatoes on one slice. Top with the second slice to form a sandwich. Repeat with the remaining bread, feta, and tomatoes.
- Dip each stuffed sandwich into the egg mixture, coating both sides evenly. Do not soak the bread too long.
- Heat the olive oil in a large skillet over medium heat.
- Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and the cheese is slightly melted.
- Slice each sandwich in half before serving.
Notes
- You can use fresh basil instead of oregano for a different flavor.
- Serve immediately with a side of fresh greens.
