Description

Stupid Easy Caramel Rolls are a simple and delicious treat perfect for holidays like Christmas and Thanksgiving. These rolls feature a soft, sweet dough swirled with a rich caramel filling, topped with a creamy glaze.

Ingredients

Scale
  • 1 cup warm milk (105-115F)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • For the Caramel Filling:
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup light corn syrup
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let stand for 5-10 minutes until foamy.
  2. Stir in softened butter, eggs, and vanilla extract.
  3. In a separate bowl, whisk together flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. While the dough is rising, prepare the caramel filling by combining brown sugar, melted butter, and corn syrup in a saucepan. Cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture is smooth. Remove from heat.
  6. Punch down the risen dough. Roll it out on a lightly floured surface into a 12×18 inch rectangle.
  7. Spread the caramel filling evenly over the dough, leaving a 1-inch border on one long side.
  8. Starting from the long side opposite the border, tightly roll up the dough. Pinch the seam to seal. Cut the roll into 12 equal slices.
  9. Place the slices cut-side up in a greased 9×13 inch baking pan. Cover and let rise for another 30 minutes.
  10. Preheat oven to 350F (175C). Bake for 20-25 minutes, or until golden brown.
  11. While the rolls are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  12. Drizzle the glaze over the warm rolls before serving.

Notes

  • Ensure your milk is warm but not hot, as this can kill the yeast.
  • You can make the dough the night before and refrigerate it. Let it come to room temperature for about 30 minutes before proceeding with rolling and filling.
  • For a richer caramel, you can add a pinch of salt to the caramel filling.
