A straightforward recipe for pork loin stuffed with herbs and breadcrumbs.

- 1 (3 pound) pork loin roast
- 1 tablespoon olive oil
- 1 cup breadcrumbs
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh sage
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- Butterfly the pork loin by slicing it lengthwise almost all the way through, opening it like a book.
- In a bowl, mix the breadcrumbs, parsley, sage, and garlic.
- Pour the chicken broth over the breadcrumb mixture and mix until just combined.
- Spread the stuffing evenly over the inside surface of the pork loin.
- Roll the pork loin tightly and secure it with kitchen twine at intervals.
- Rub the outside of the roast with olive oil and season with salt and pepper.
- Place the roast in a baking dish.
- Bake for 60 to 75 minutes, or until an internal temperature of 145 degrees F (63 degrees C) is reached.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
- Use a meat thermometer to check for doneness accurately.
- You can substitute dried herbs for fresh, using half the amount listed.
