- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped
- 15 ounces ricotta cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Pinch of nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 3-5 minutes. Drain any excess liquid.
- In a medium bowl, combine ricotta cheese, eggs, Parmesan cheese, salt, pepper, and nutmeg. Mix well.
- Stir the cooked spinach and onion mixture into the ricotta mixture.
- Pour the mixture into a greased 8×8 inch baking dish.
- Bake for 25-30 minutes, or until the top is golden brown and the center is set.
- Let it cool slightly before serving.

- You can add other vegetables like mushrooms or bell peppers.
- Garnish with fresh herbs like parsley or chives before serving.
