Description

A straightforward recipe for a comforting chicken and rice soup.


Ingredients

  • 6 cups chicken broth
  • 1 cup cooked, shredded chicken breast
  • 1/2 cup white rice, uncooked
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Combine chicken broth, shredded chicken, uncooked rice, diced carrot, diced celery, and dried thyme in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 20 to 25 minutes, or until the rice is tender.
  4. Season with salt and pepper before serving.

Notes

  • For quicker cooking, use pre-cooked rice and add it during the last 5 minutes of simmering.
  • You can substitute brown rice, but increase the simmering time until the rice is soft.
