Description
A simple casserole combining savory Sloppy Joe filling with a sweet cornbread topping.

- 1 pound ground beef
- 1 onion, chopped
- 1 (15 ounce) can tomato sauce
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (8.5 ounce) package cornbread mix
- Ingredients listed on cornbread mix for preparation (usually milk and egg)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard powder, salt, and pepper into the skillet. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
- Prepare the cornbread mix according to the package directions, using the liquid and egg required.
- Spread the Sloppy Joe mixture evenly into the bottom of the prepared baking dish.
- Pour the cornbread batter over the meat mixture, spreading it to cover the top completely.
- Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
- Let the casserole cool for 5 minutes before cutting and serving.
Notes
- You can add 1/2 cup of shredded cheddar cheese on top of the cornbread batter before baking for extra flavor.
- For a spicier version, add 1/4 teaspoon of red pepper flakes to the meat mixture.
