Description

A straightforward recipe for preparing flavorful Churrasco style steak.


Ingredients

  • 2 lbs flank steak or skirt steak
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 4 cloves garlic, minced
  • 1 tablespoon coarse salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Combine olive oil, lime juice, minced garlic, salt, pepper, and oregano in a bowl. This is your marinade.
  2. Place the steak in a resealable plastic bag or non-reactive dish. Pour the marinade over the steak, ensuring it is fully coated.
  3. Refrigerate the steak for at least 2 hours, or preferably overnight.
  4. Remove the steak from the refrigerator 30 minutes before cooking to let it come closer to room temperature.
  5. Preheat your grill to high heat. Clean and oil the grates.
  6. Remove the steak from the marinade and discard the excess liquid.
  7. Grill the steak for 4 to 6 minutes per side for medium-rare, depending on thickness.
  8. Remove the steak from the grill and let it rest on a cutting board for 10 minutes before slicing.
  9. Slice the steak thinly against the grain.

Notes

  • For best results, use a meat thermometer to check internal temperature: 130-135°F for medium-rare.
  • You can substitute lemon juice for lime juice if preferred.
