Description

A straightforward recipe for a warm blackberry cobbler with a biscuit topping.


Ingredients

  • 4 cups fresh or frozen blackberries
  • 1 cup granulated sugar (adjust to berry sweetness)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 large egg, lightly beaten

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the blackberries, 1 cup sugar, cornstarch, and lemon juice. Mix gently. Pour the berry mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. In a small bowl, mix the milk and the beaten egg. Add this liquid mixture to the dry ingredients and stir just until combined to form a thick batter. Do not overmix.
  6. Drop spoonfuls of the batter over the top of the blackberry filling, leaving small gaps between the dollops.
  7. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the cobbler cool slightly before serving.

Notes

  • If using frozen blackberries, do not thaw them before mixing with the sugar and cornstarch.
  • Serve warm with vanilla ice cream or whipped cream.
