Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups seafood broth
- 1 cup heavy cream
- 1 lb mixed seafood (shrimp, scallops, fish), chopped
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in seafood broth and bring to a simmer.
- Stir in heavy cream and mixed seafood.
- Cook until seafood is cooked through, about 5-7 minutes.
- Stir in fresh parsley.
- Season with salt and pepper to taste.
Notes
- You can add other vegetables like celery or carrots.
- For a thicker soup, you can add a roux made from butter and flour.
- Adjust cream to your desired consistency.
