Ingredients

- 12 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- Stir the cooked onion and spinach mixture into the egg mixture.
- Pour the egg mixture into the prepared baking pan.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 25-30 minutes, or until the frittata is set and lightly golden brown.
- Let cool slightly before cutting into squares. Serve warm or cold.
Notes
- These can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or oven.
- Feel free to add other vegetables like bell peppers or mushrooms.
