Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. Stir the cooked onion and spinach mixture into the egg mixture.
  6. Pour the egg mixture into the prepared baking pan.
  7. Sprinkle the shredded cheese evenly over the top.
  8. Bake for 25-30 minutes, or until the frittata is set and lightly golden brown.
  9. Let cool slightly before cutting into squares. Serve warm or cold.
