A simple and flavorful dish featuring pan-seared steak and roasted potatoes with garlic.

- 1.5 lbs sirloin steak
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp dried rosemary
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the halved baby potatoes with 1 tbsp olive oil, rosemary, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
- While potatoes roast, pat the sirloin steak dry with paper towels. Season generously with salt and pepper.
- Heat the remaining 1 tbsp olive oil and butter in a cast-iron skillet over medium-high heat.
- Once the butter is melted and the pan is hot, add the steak. Sear for 3-4 minutes per side for medium-rare, adjusting time for your desired doneness.
- In the last minute of cooking, add the minced garlic to the skillet and cook until fragrant.
- Remove steak from skillet and let it rest for 5-10 minutes before slicing.
- Serve the sliced steak with the roasted potatoes. Spoon any pan juices over the steak and potatoes.
Notes
- For extra flavor, you can add a splash of red wine to the pan after searing the steak and let it reduce.
- Ensure your skillet is hot before adding the steak for a good sear.
