Ingredients

  • 1/2 cup chopped water chestnuts
  • 1/2 cup chopped mushrooms
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 head butter lettuce, leaves separated
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/4 cup Thai chili sauce

Instructions

  1. Cook the ground chicken in a large skillet over medium heat until browned. Drain excess fat.
  2. Stir in the water chestnuts, mushrooms, soy sauce, rice wine vinegar, sesame oil, honey, ginger, garlic, and red pepper flakes.
  3. Cook for 5-7 minutes, or until the vegetables are tender and the sauce has thickened.
  4. Spoon the chicken mixture into the lettuce leaves.
  5. Top with green onions and peanuts.
  6. Serve with Thai chili sauce on the side.
