- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Place the chicken thighs skin-side down in the skillet and cook for 6-8 minutes until the skin is browned.
- Flip the chicken and cook for another 5 minutes.
- In a small bowl, whisk together the chicken broth, soy sauce, and brown sugar.
- Pour the liquid mixture over the chicken in the skillet.
- Bring the sauce to a simmer, then reduce the heat to medium-low, cover, and cook for 15 minutes, or until the chicken is cooked through.
- In a separate small bowl, mix the cornstarch and water to create a slurry.
- Remove the chicken from the skillet and set aside.
- Stir the cornstarch slurry into the simmering sauce in the skillet.
- Cook, stirring constantly, until the sauce thickens, about 1 minute.
- Return the chicken to the skillet and coat with the thickened sauce before serving.
Notes
- You can use boneless, skinless thighs, but adjust the cooking time.
- For a thicker sauce, add a little more cornstarch slurry.
