A basic recipe for a sweet and tangy tomato relish.
Ingredients

- 1 kg ripe tomatoes, chopped
- 500 g onions, chopped
- 250 ml vinegar (white or cider)
- 200 g sugar (brown or white)
- 1 tablespoon mixed spice
- 1 teaspoon salt
Instructions
- Combine tomatoes, onions, vinegar, sugar, mixed spice, and salt in a large pot.
- Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
- Reduce the heat to low and simmer gently for 1.5 to 2 hours, stirring occasionally.
- The relish is ready when it has thickened considerably and coats the back of a spoon.
- Sterilize jars and lids.
- Ladle the hot relish into the sterilized jars, leaving a small headspace.
- Seal the jars tightly and allow them to cool completely.
Notes
- For a smoother texture, you can blend the relish slightly before the final simmering stage.
- Adjust sugar or vinegar amounts to suit your taste preference for sweetness or tanginess.
