Ingredients

- 1 large cucumber
- 1 tablespoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon sesame seeds
- 1 clove garlic, minced
Instructions
- Slice the cucumber thinly.
- Toss the cucumber slices with salt and let sit for 10 minutes.
- Drain the excess liquid from the cucumber.
- In a bowl, combine rice vinegar, soy sauce, sugar, sesame oil, sesame seeds, and minced garlic.
- Add the drained cucumber to the dressing and toss to coat.
- Serve immediately or chill for later.
Notes
- For a spicier salad, add a pinch of red pepper flakes.
- You can add thinly sliced red onion for extra flavor.
