Ingredients

  • 2 tablespoons rice vinegar

  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sesame seeds
  • 1 clove garlic, minced

Instructions

  1. Slice the cucumber thinly.
  2. Toss the cucumber slices with salt and let sit for 10 minutes.
  3. Drain the excess liquid from the cucumber.
  4. In a bowl, combine rice vinegar, soy sauce, sugar, sesame oil, sesame seeds, and minced garlic.
  5. Add the drained cucumber to the dressing and toss to coat.
  6. Serve immediately or chill for later.
