Ingredients

Instructions

  1. Thinly slice the cucumber. You can use a mandoline for uniform slices.
  2. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes (if using).
  3. Add the sliced cucumber to a serving bowl.
  4. Pour the dressing over the cucumber.
  5. Toss gently to coat the cucumber evenly.
  6. Garnish with sesame seeds before serving.
