Instructions
- Thinly slice the cucumber. You can use a mandoline for uniform slices.
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes (if using).
- Add the sliced cucumber to a serving bowl.
- Pour the dressing over the cucumber.
- Toss gently to coat the cucumber evenly.
- Garnish with sesame seeds before serving.
Notes
- For a crispier salad, you can salt the cucumber slices and let them sit for 15-20 minutes, then pat them dry before dressing.
