Simple Red Cabbage Slaw

Description

A quick and crisp slaw made with red cabbage and a light vinaigrette.


Ingredients

  • 1/2 head red cabbage, thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the sliced red cabbage in a large bowl.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper until the sugar dissolves.
  3. Pour the dressing over the cabbage.
  4. Toss well to coat all the cabbage evenly.
  5. Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For extra crunch, add 1/4 cup of sunflower seeds.
  • You can substitute honey for sugar in the dressing.
