- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup water
- 4 cups cooked rice (for serving)
- 1 cup shredded lettuce (for topping)
- 1/2 cup salsa (for topping)
- 1/4 cup sour cream or Greek yogurt (for topping)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned, about 5-7 minutes.
- Add sliced bell peppers and onion to the skillet. Cook until vegetables soften, about 5 minutes.
- Stir in the ranch seasoning mix and water. Bring to a simmer.
- Cook until the sauce thickens slightly, about 3-5 minutes, stirring occasionally.
- Divide cooked rice among four bowls.
- Top the rice with the ranch chicken and vegetable mixture.
- Garnish each bowl with lettuce, salsa, and sour cream or yogurt.
Notes
