  • 4 cups cooked rice (for serving)
  • 1 cup shredded lettuce (for topping)
  • 1/2 cup salsa (for topping)
  • 1/4 cup sour cream or Greek yogurt (for topping)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken to the skillet and cook until browned, about 5-7 minutes.
  3. Add sliced bell peppers and onion to the skillet. Cook until vegetables soften, about 5 minutes.
