- 1/4 cup milk
- 1/2 cup chopped fresh spinach
- 1/4 cup crumbled feta cheese
- Salt and black pepper to taste
- Cooking spray or oil for muffin tin
Instructions
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or oil.
- In a medium bowl, whisk together the eggs and milk until well combined.
- Stir in the chopped spinach and crumbled feta cheese. Season with salt and pepper.
- Pour the egg mixture evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until the muffins are set and lightly golden.
- Let the muffins cool in the tin for a few minutes before removing them.
Notes
- You can add other vegetables like chopped bell peppers or onions.
- These muffins can be made ahead and stored in the refrigerator for up to 3 days. Reheat gently in the microwave.
