- 2 cups fresh purslane, washed and dried
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Place the washed purslane, cucumber, and red onion in a medium bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Gently toss everything together until lightly coated.
- Serve immediately.
Notes
- You can add crumbled feta cheese for extra flavor.
- For a tangier dressing, substitute white wine vinegar for lemon juice.
