- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup water
- 1 teaspoon pumpkin pie spice
- Powdered sugar for rolling (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, combine the spice cake mix, eggs, vegetable oil, and water.
- Stir in the pumpkin pie spice. Mix until well combined and a dough forms.
- If desired, roll the dough into balls and then roll them in powdered sugar.
- Place the dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 9-11 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger pumpkin flavor, you can add 1/4 cup of pumpkin puree to the dough.
- You can also add chocolate chips or chopped nuts for extra texture and flavor.
- Store cooled cookies in an airtight container at room temperature.
