- 1/2 cup milk
- 1/4 cup pumpkin puree
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 tablespoon brown sugar
- 1/2 teaspoon vanilla extract
- 8 slices thick bread
- Butter for cooking
Instructions
- In a shallow dish, whisk together eggs, milk, pumpkin puree, cinnamon, nutmeg, ginger, brown sugar, and vanilla extract until well combined.
- Heat a lightly buttered griddle or large skillet over medium heat.
- Dip each slice of bread into the pumpkin mixture, coating both sides evenly. Do not let the bread soak too long.
- Place the coated bread onto the hot griddle.
- Cook for 3 to 4 minutes per side, until golden brown and cooked through.
- Serve immediately with your preferred toppings.

- Use day-old bread for best results.
