Simple recipe for layered pumpkin and cream cheese bars with a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 (15 ounce) can pumpkin puree
- 1/4 cup packed light brown sugar
- 1/4 teaspoon ground ginger
Instructions
- Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a bowl. Press this mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
- While the crust bakes, prepare the cheesecake layer. Beat the softened cream cheese and 1/2 cup granulated sugar together until smooth. Beat in the egg, vanilla extract, cinnamon, and nutmeg until just combined.
- Spread the cheesecake mixture evenly over the warm crust.
- In a separate bowl, whisk together the pumpkin puree, brown sugar, and ginger. Drop spoonfuls of the pumpkin mixture over the cheesecake layer.
- Use a knife or skewer to gently swirl the pumpkin into the cheesecake layer.
- Bake for 30 to 35 minutes, or until the edges are set and the center is mostly set but still slightly jiggly.
- Let the bars cool completely on a wire rack. Chill in the refrigerator for at least 2 hours before cutting into squares.
Notes
- For cleaner cuts, chill the bars for 4 hours or overnight before slicing.
- You can substitute gingersnap crumbs for graham cracker crumbs for a spicier crust.
