Simple Potato Croquettes

Description

A recipe for making crispy, savory potato croquettes.


Ingredients

  • 2 large potatoes, peeled and quartered
  • 1/4 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/2 cup breadcrumbs
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in salted water until tender. Drain them well.
  2. Mash the potatoes until smooth. Let them cool slightly.
  3. Mix the salt and pepper into the mashed potatoes.
  4. Place the flour, beaten egg, and breadcrumbs in three separate shallow dishes.
  5. Take about 2 tablespoons of potato mixture and shape it into a small cylinder or ball.
  6. Roll the shaped potato first in the flour, then dip it in the egg, and finally coat it thoroughly with breadcrumbs.
  7. Repeat with the remaining potato mixture.
  8. Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).
  9. Carefully fry the croquettes in batches until they are golden brown on all sides, about 3 to 4 minutes.
  10. Remove the croquettes with a slotted spoon and place them on paper towels to drain excess oil.
  11. Serve hot.

Notes

  • For best results, chill the shaped croquettes for 30 minutes before frying.
  • You can bake these instead of frying for a lower fat option; bake at 400°F (200°C) for 20 minutes, turning halfway.
