Description

A simple recipe for flavorful Portobello mushroom fajitas.


Ingredients

  • 2 large Portobello mushroom caps, sliced
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 8 small flour tortillas
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. In a bowl, toss the sliced mushrooms and peppers with olive oil, lime juice, chili powder, cumin, smoked paprika, and salt.
  2. Heat a large skillet over medium-high heat.
  3. Add the seasoned vegetables to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms are tender and the vegetables are slightly charred.
  4. Warm the flour tortillas according to package directions.
  5. Spoon the mushroom and pepper mixture into the warm tortillas.
  6. Add your desired toppings and serve immediately.

Notes

  • You can substitute vegetable broth for some of the olive oil if you prefer less fat.
  • For extra flavor, add 1 minced garlic clove with the vegetables.
