Description
Crispy breaded pork cutlets served with a fresh, peppery arugula salad.
Ingredients

- 2 boneless pork loin chops, about 1/2 inch thick
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 2 cups arugula
- 1 tablespoon lemon juice
- 1 tablespoon extra virgin olive oil
Instructions
- Pound the pork chops to about 1/4 inch thickness.
- Set up three shallow dishes: one with flour, one with the beaten egg, and one with panko breadcrumbs mixed with Parmesan cheese, salt, and pepper.
- Dredge each pork chop in flour, then dip in egg, and finally coat with the breadcrumb mixture.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the pork chops for 3-4 minutes per side, until golden brown and cooked through.
- In a small bowl, toss arugula with lemon juice and extra virgin olive oil. Season with salt and pepper.
- Serve the pork Milanese immediately with the arugula salad.
Notes
- For extra flavor, add a pinch of garlic powder to the breadcrumbs.
- You can substitute chicken or veal for pork.
