A straightforward recipe for making flavorful Piri Piri Chicken.


Ingredients

  • 2 lbs chicken pieces (thighs or breasts)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 14 fresh red chilies (depending on heat preference), chopped

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, smoked paprika, oregano, salt, pepper, and chopped chilies to make the marinade.
  2. Place the chicken pieces in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  3. Refrigerate the chicken for at least 1 hour, or preferably up to 4 hours, to marinate.
  4. Preheat your grill or oven broiler to medium-high heat.
  5. Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
  6. Grill or broil the chicken for 6-8 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit and the juices run clear.
  7. Let the chicken rest for 5 minutes before serving.

Notes

  • For extra flavor, baste the chicken with any pan drippings during the last few minutes of cooking.
  • If you prefer a smoother sauce, blend the marinade before adding the chicken.
