A simple baked casserole featuring pineapple and cheese.

- 1 cup crushed pineapple, drained
- 1 cup shredded cheddar cheese
- 1 cup cracker crumbs (like saltines)
- 1/2 cup melted butter
- 2 eggs, lightly beaten
- 1/4 cup sugar
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking dish.
- In a medium bowl, combine the cracker crumbs, melted butter, and sugar. Mix until crumbly.
- In a separate bowl, mix the drained pineapple, eggs, and shredded cheese.
- Spread half of the crumb mixture into the bottom of the prepared baking dish.
- Pour the pineapple and cheese mixture evenly over the crumb layer.
- Sprinkle the remaining crumb mixture over the top.
- Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
- Let it cool for 10 minutes before serving.
Notes
- Use sharp cheddar for a stronger cheese flavor.
- You can substitute saltines with graham cracker crumbs for a sweeter result.
