Description

A moist pound cake flavored with pineapple and coconut, reminiscent of a pina colada.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup full-fat coconut milk
  • 1/4 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded sweetened coconut
  • For Glaze: 1 cup powdered sugar, 2 tablespoons pineapple juice, 1 tablespoon coconut milk

Instructions

  1. Preheat your oven to 325 degrees F (160 degrees C). Grease and flour a 10-inch tube or bundt pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. In a small bowl, mix the coconut milk, pineapple juice, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the liquid mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Fold in the shredded coconut.
  8. Pour the batter into the prepared pan.
  9. Bake for 60 to 75 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
  11. To make the glaze, whisk together the powdered sugar, pineapple juice, and coconut milk until smooth. Drizzle over the cooled cake.

Notes

  • You can toast the shredded coconut lightly before folding it into the batter for a deeper flavor.
  • For an extra tropical flavor, substitute 1/4 cup of the all-purpose flour with almond flour.
