- 1 pound salmon fillet, skin removed and cut into 1-inch cubes
- 1/2 cup basil pesto
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- In a medium bowl, toss the salmon cubes with olive oil, salt, and pepper.
- Add the pesto to the bowl and gently mix until the salmon pieces are evenly coated.
- Arrange the salmon bites in a single layer on the prepared baking sheet.
- Bake for 10 to 12 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately.
Notes
- You can use store-bought or homemade pesto.
- For extra flavor, sprinkle a little grated Parmesan cheese over the bites before baking.
