Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 8 ounces spaghetti
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste

Instructions

  1. Cook spaghetti according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add zucchini to the skillet and cook until tender-crisp, about 3-4 minutes. Add cherry tomatoes and cook for another 2 minutes until they begin to soften.
  4. Return chicken to the skillet. Add the cooked spaghetti, basil pesto, and reserved pasta water. Toss to combine and heat through.
  5. Stir in 1/4 cup Parmesan cheese. Season with salt and pepper to taste.
  6. Serve immediately, topped with additional Parmesan cheese.
