- 2 cups pancake mix
- 1 large egg
- 1 cup milk
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a medium bowl, whisk together the pancake mix, egg, milk, and vanilla extract until just combined. Do not overmix; a few lumps are fine.
- Pour about 2 inches of vegetable oil into a deep pot or Dutch oven. Heat the oil to 350 degrees Fahrenheit (175 degrees Celsius). Use a thermometer to check the temperature.
- Carefully drop spoonfuls or use a piping bag to place small amounts of batter into the hot oil. Do not overcrowd the pot.
- Fry the donuts for about 1 to 2 minutes per side, until golden brown.
- Use a slotted spoon to remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
- While the donuts are still warm, toss them in powdered sugar until coated.
Notes
- If you do not have a deep fryer, use a heavy-bottomed pot for frying.
- Adjust the size of the donut pieces based on your preference for small bites or larger donuts.
