Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
- Place the chicken pieces, broccoli florets, carrots, and red onion wedges in a large bowl.
- Pour the balsamic mixture over the chicken and vegetables. Toss gently until everything is evenly coated.
- Spread the chicken and vegetables in a single layer on a large, rimmed baking sheet.
- Bake for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.
Notes
- You can substitute other vegetables like bell peppers or zucchini if you prefer.
- For crispier vegetables, ensure they are not overcrowded on the pan.
