Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the granulated sugar and brown sugar. Add the egg, milk, melted butter, and vanilla extract. Mix until just combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until the batter is mixed. Do not overmix; a few lumps are fine.
  5. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  6. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the muffins cool, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk, and 1/4 teaspoon of vanilla extract until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  9. Dip the top of each cooled muffin into the glaze, or drizzle the glaze over the tops. Let the glaze set before serving.

Notes

  • For a richer flavor, use buttermilk instead of regular milk.
  • You can add a pinch of nutmeg to the dry ingredients for a spiced doughnut taste.
