Description
A straightforward recipe for chicken marinated in traditional Cuban mojo sauce.
Ingredients

- 2 lbs chicken pieces (thighs or breasts)
- 1/2 cup sour orange juice (or mix 1/4 cup orange juice and 1/4 cup lime juice)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl, combine the sour orange juice, olive oil, minced garlic, cumin, oregano, salt, and pepper. Mix well.
- Place the chicken pieces in a sealable bag or non-reactive dish. Pour the marinade over the chicken, making sure all pieces are coated.
- Refrigerate the chicken for at least 2 hours, or preferably overnight for deeper flavor.
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) or prepare your grill.
- Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.
- Bake the chicken for 30 to 40 minutes, or grill until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the juices run clear.
- Let the chicken rest for 5 minutes before serving.
Notes
- If you do not have sour oranges, use the orange and lime juice combination specified in the ingredients.
- You can use this marinade for pork as well.
