Mini Jalapeño Popper Egg Rolls

Description

Crispy egg rolls filled with cream cheese, cheddar cheese, and jalapeños.


Ingredients

  • 12 egg roll wrappers
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 23 jalapeños, seeded and finely diced
  • 1/4 cup chopped cooked bacon (optional)
  • 1 egg, beaten
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, combine the softened cream cheese, cheddar cheese, diced jalapeños, and bacon (if using). Mix well.
  2. Lay an egg roll wrapper on a flat surface with one corner pointing towards you.
  3. Place about 2 tablespoons of the cheese mixture in the center of the wrapper.
  4. Fold the bottom corner up over the filling. Fold in the left and right sides.
  5. Roll the wrapper up tightly towards the top corner, sealing the edge with the beaten egg.
  6. Repeat with the remaining wrappers and filling.
  7. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  8. Carefully fry the egg rolls in batches for 3-5 minutes, or until golden brown and crispy.
  9. Remove the egg rolls from the oil and drain on paper towels.
  10. Serve hot.

Notes

  • For a milder flavor, remove all seeds and membranes from the jalapeños.
  • Serve with your favorite dipping sauce, such as ranch or sour cream.
