Description

A quick and fresh bowl featuring Mediterranean flavors.


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomato
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup chopped red onion
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Place the cooked quinoa in the bottom of a bowl.
  2. Add the cucumber, tomato, feta cheese, olives, and red onion over the quinoa.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the ingredients in the bowl.
  5. Sprinkle with fresh parsley before serving.

Notes

  • You can substitute brown rice for quinoa.
  • For added protein, include grilled chicken or chickpeas.
