A quick and fresh bowl featuring Mediterranean flavors.
Ingredients

- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup chopped tomato
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, halved
- 1/4 cup chopped red onion
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place the cooked quinoa in the bottom of a bowl.
- Add the cucumber, tomato, feta cheese, olives, and red onion over the quinoa.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Drizzle the dressing over the ingredients in the bowl.
- Sprinkle with fresh parsley before serving.
Notes
- You can substitute brown rice for quinoa.
- For added protein, include grilled chicken or chickpeas.
